Mini Tahini Sponge Cakes

These mini tahini cakes are delightful tea cakes with the nuttiness of the tahini and the moist crumb with that crisp coat…yumm… just makes them irresistible.

Ingredients: 

  • 3 eggs 
  • 1 1/2 cup brown sugar
  • 3/4 cup oil
  • 2 cup flour
  • 2 tsp baking powder
  • 10g vanilla sugar
  • 3/4 cup raw Achva tahini
  • 1 cup lemonade or orange juice. 
  • For garnish; 4 tsp tahini, 1 tsp cinnamon & 1/2 pack sesame. 

instructions: 

  • Mix tahini & cinnamon and brush a baking tray. then sprinkle sesame all over. 
  • Beat eggs, sugar & vanilla till creamy. then slowly fold in oil and lemon.
  • Add the tahini to the mixture till creamy. 
  • Mix in flour and baking powder (at this point you can add raisins/nuts/chocolate chips…) then place onto the tahini coated baking tray.
  • Heat your oven to 170 degrees, and cook for 40min.
